What do you do when you have so many rolls in your bread drawer and your freezer is full to capacity? Well, I make bread pudding. Sometimes I make it sweet and sometimes I make it savory. This morning it was savory. So I surprised my hubby with sausage and cheddar bread pudding for breakfast in bed. Moist and delicious!
Basic Bread Pudding
4 eggs
3 cups whole milk
5-6 cups chunked bread
These are the basic ingredients for bread pudding. Once you have these you can add sugar and cranberries, nuts and cinnamon or in this case sausage and cheese.
1/2 lb breakfast sausage
1 cup shredded cheddar cheese
1/2 cup onion diced
1/2 cup celery diced
salt & pepper to taste
Preheat the oven to 350 °F. In a small pot cook the sausage, diced onions and diced celery until sausage is cooked through and the onions and celery are translucent.
While that is cooking, beat the milk and eggs together and add shredded cheese. Add the cooked sausage mixture to the eggs and pour mixture over the cubed bread in a separate bowl. Gently mix. Allow the mixture to sit for 10 to 15 minutes so the bread soaks up all the milk.
Pour the bread mixture into a well greased oven safe pan and cook for 45 minutes. Rest for 10 minutes when you pull it from the oven and enjoy!

I make sweet bread pudding sometimes for my son. We call it chopped french toast. THIS looks so delish, I am going to make it Sunday for breakfast to go with my red beers and football! Great idea…thanks! 🙂

I made this yesterday…delicious! I used a loaf of jalapeno cheese bread, 1 lb of breakfast sausage, 1/2 onion, 1 cup sharp cheddar, 6 eggs, a cup of buttermilk, a cup of milk and some salt and pepper.
