We are now in the middle of the Fall season! Apple picking is in full swing here in southern New Jersey and it’s time to use up some of our bounty! These Pork Chop with Brandy-Maple Apples are a great way to use fresh picked apples…
Pork Chops with Brandy-Maple Apples
4 boneless pork chops
1 tablespoon extra virgin olive oil
salt & pepper
1 tablespoon butter
1 large red onion, sliced into thin wedges
3 garlic cloves, minced
1 tablespoons fresh thyme
2 Pink Lady apples, cored and sliced into thin wedges
2 tablespoons Brandy
1/2 cup light cream
2 tablespoons pure maple syrup
Season the pork chops with salt & pepper. Heat the olive oil in a large skillet on medium-high heat. Cook pork chops two minutes on each side. Remove from the pan, place on a dish and cover with aluminum.Β In the same skillet, add the butter. Add the red onion and garlic. SautΓ© 3 minutes, adding the thyme and additional salt and pepper (to taste). Add the sliced apples and sautΓ© 3-5 minutes until apples are almost tender.
Add the brandy; stir. Add the light cream; stir. Add the pure maple syrup; stir one final time.
Spoon the Brandy-Maple Apples over the Pork Chops. Place any remaining Brandy-Maple Apples in a side bowl and bring to the table for anyone who wants some extra…

OMG – the perfect way to add pizzazz to pork chops! I love all apple-based recipes. Do you ever marinate your pork chops in brine before cooking, to maximize tenderness?

Thanks Dominique! Yes, I have brined pork before – and you could surely brine it before cooking this recipe – Pork sometimes need more tenderizing!! π

Yes! I notice that! Every now and then when I cook pork, it has the same consistency as hockey pucks – haha! Brining really helped. Cannot wait to try this recipe! xo
