Spanish Stuffed Pork Chops
2 thick pork chops, bone-in
2 garlic cloves, minced
1 teaspoon oregano
1 teaspoon parsley
2 slices Jamón Serrano
1/4 lb Manchego cheese, sliced
extra virgin olive oil
salt & pepper
Heat oven to 400°F. Using a very sharp knife, cut a pocket into each thick pork chop. Combine the oregano, parsley, saffron & garlic and press into both sides of pork chops. Wrap 4 slices of Manchego cheese into one of the slices of Jamón Serrano and stuff into the pocket of the pork chop. Repeat with remaining pork chop.
Heat a drizzle of olive oil in a cast iron skillet until very hot. Sear the pork chops 1 minute on the first side.
Turn the pork chops over and sear for one minute of the second side. Then place the cast iron skillet in the heated oven and roast pork chops for 6 minutes. Turn pork chops over and place back in the oven for 4 minutes.
Remove from the oven and cover with aluminum foil. Allow to rest for a few minutes to redistribute the juices. This is great served with Sautéed Skillet Potatoes and a salad. Enjoy!
