Filet Mignon Tips With Mushrooms, Onions & Thyme 0

What I love about filet mignon beef tips and mushrooms is that the meat is as tender as the mushrooms . When I was a vegetarian, I would substitute mushrooms for meat, so this dish is the best of both worlds. When I want filet I buy the whole tenderloin, then I trim it up and cut all my steaks. Using the whole loin leaves me with pieces that are perfect for tips. It is a very simple dish and here is how I make mine…

Filet Mignon Tips With Mushrooms, Onions & Thyme
2-3 lbs tenderloin tips
1 Tbs olive oil
1 large package button mushrooms quartered
1 large onion diced
2/3 cloves garlic minced
2 tbs butter
1 bunch thyme (1/4 cup)
1 bunch chives
1/2 cup Beef Consommé
1/2 cup wine (white or red, I used a dry white)
salt & pepper

Generously salt & pepper filet tips. In a skillet heat olive oil and cook beef until just brown on all sides then remove from pan. In the same skillet you just removed the beef from, add 1 Tbs of butter, garlic, herbs, onion and mushrooms. Cook on medium to medium-hi heat until mushrooms and onions become tender.

Return the beef to the pan and add Beef Consommé. Cook for 2 minutes then add wine. Cook for 2 minutes more on medium heat. Turn heat off and remove pan from burner. Add additional tablespoon of butter to glaze and finish the sauce. Top beef with more herbs and serve. I serve this dish with a simple linguine aioli. So tender, so good!

    1. It makes it oh so tender. When I can get them really fresh, I use Chanterelle mushrooms… the flavor of the filet and the Chanterelle’s are over the top!
