I love autumn. I love the cool weather and the changing colors of the leaves. Our fresh summer salads recipes are put on the back burner until next summer and we crave the warm seasonal flavors of Fall. Roasted vegetables, dried fruits and nuts. In this salad I’ve combined some of the flavors of the autumn season…

Roasted Asparagus Autumn Salad
8-10 Asparagus
1/3 cup chopped dried mango
1/4 cup pine nuts
1/3 cup shaved manchego cheese
1/2 cup roasted salted corn nuts
5-6 cups salad greens
salad dressing of your choice

Heat the oven to 400 Β°F. Chop off the woody part of the asparagus and place on a baking sheet. Drizzle with extra virgin olive oil and a little salt & pepper. Roast 10-15 minutes until tender. Cut into 1″ slices. Distribute the salad greens on 2-4 plates (depending on how many people you’re serving and if this is the main meal or a side dish). Top with the roasted asparagus, dried mango slices, pine nuts, manchego cheese & roasted salted corn nuts.

There’s so much flavor in this salad! Drizzle on your favorite salad dressing or vinaigrette and serve. Enjoy!
