The Cookie Jar: Butterscotch & Chocolate Chunk Cookies

Everyone loves a great tasting cookie…Here is the classic chocolate chip cookie with the addition of butterscotch chips! Double yummy!! I love to use semi-sweet baking squares and chop them into bits as their flavor is so much richer than the regular chips. These are my son Gabe’s favorite cookie. Hope you love them as much as he does. And I have to admit that the colorful box in the photo above inspired me to make these…I really wanted to use that box!! Enjoy this easy & very tasty dessert…

Butterscotch & Chocolate Chunk Cookies
2 sticks butter, room temperature
1 cup sugar
1/2 cup brown sugar
2 eggs
2 1/4 cups flour
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon vanilla
1 cup chopped semi-sweet chocolate baking squares
1 cup butterscotch chips

Heat oven to 350 Β°F. In a large bowl, using an electric mixer, blend the butter, sugar, brown sugar and eggs until creamy. Blend in the flour, baking soda, salt & vanilla.Β Be sure to chop up the semi-sweet chocolate baking squares into nice chunks!

Add the semi-sweet chocolate chunks and the butterscotch chips to the batter and stir by hand until combined.Β Shape batter into balls and place on cookie sheet. Pop into oven 10-12 minutes until done.

Remove from oven and after a minute or two use a spatula to remove from baking sheet. Allow to cool or eat warm!

They may be thin but they sure are delicious! Great addition to The Cookie Jar!

If you want to be really bad you can break them up over some vanilla ice cream! Now we’re talking! I may have to bike a few extra miles to work this delicious treat off!

    1. Wish I could get them to stop being flat! I’ve tried the ‘put them in the fridge’ and the ‘use only fresh baking soda’and so on…but alas, they are always flat.. but very tasty!! πŸ™‚ πŸ™‚
