North Carolina-Style Pulled Pork Sandwiches
2 1/2 lbs boneless pork shoulder roast
1 tablespoon paprika
1/2 tablespoon garlic powder
1/2 tablespoon brown sugar
1/2 tablespoon dry mustard
1/2 tablespoon salt
1 tablespoon extra virgin olive oil
4-6 sandwich rolls
Preheat the oven to 300 °F. In a small jar combine all the seasonings. Rub the seasoning mixture all over the pork. Heat the oil in a large deep skillet and brown the seasoned pork on all sides (8-10 minutes total). Place browned pork roast on a large piece of heavy duty aluminum foil. Pour drippings from skillet over pork and wrap up in the aluminum foil. Place on a baking dish then into the oven and roast 2 hours until pork is tender. Place roast back into the deep skillet and shred with two forks. Pour cooking juices over shredded pork. Cover and keep warm. At this point you have two choices – serve the shredded pork as is or add the vinegar-based BBQ sauce to make it ‘North Carolina-Style’. I make the sauce and keep it separate since half the family likes it and the other half don’t! Pour a little of the barbecue sauce over each pulled pork sandwich before topping with the Coleslaw.
Coleslaw
2 cups refrigerated coleslaw mix
1/2 cup mayonnaise
2 tablespoons Dijon mustard
2 tablespoons cider vinegar
salt & pepper to taste
North Carolina Vinegar BBQ Sauce
1/2 cup ketchup
1/4 cup cider vinegar
1 tablespoon brown sugar
1 tablespoon Spicy brown mustard
salt & pepper to taste
Combine all ingredients in a small saucepan and bring to a simmer; heat through. To assemble sandwiches: Place shredded pulled pork on sandwich rolls; topping with BBQ sauce and Coleslaw.

You have really outdone yourself. The first pictures I saw was so yummy looking! Even the bun looked fresh and soft. Coleslaw adds to it! BRAVO!
