This Saturday morning I was craving something warm and baked for breakfast. After baking these Buttermilk Blueberry & Chocolate Muffins I ate two…the remaining muffins were scarfed down so quickly by my sons and their friends that before I even blinked they were gone! Thank goodness I got to them first…
Buttermilk Blueberry & Chocolate Muffins
1 1/2 cup flour
1/2 cup sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup buttermilk
4 tablespoons butter, just-barely melted
1 teaspoon vanilla
2 eggs
1 pint fresh blueberries, rinsed
1 cup chocolate chunks
Topping * (see recipe below)
Preheat oven to 375 °F. In a mixing bowl, sift the flour, sugar, baking powder, baking soda & salt. In another mixing bowl combine the buttermilk, vanilla, eggs. Pour in the melted butter and whisk gently to combine. Pour the buttermilk mixture into the flour mixture and whisk until just barely combined. Add the blueberries & chocolate and stir very gently until just combined. Scoop into prepared muffin tins lined with paper liners. Set aside and make topping.
Muffin Topping*
1/2 cup flour
1/4 cup brown sugar
1/4 teaspoon cinnamon
1/4 teaspoon salt
4 tablespoons room temperature butter
In a mixing bowl, combine the flour, brown sugar, cinnamon, salt & butter. Using a fork, stir mixture until it turns into crumbles. Sprinkle crumbled mixture over the batter in each muffin tin. Bake for 20 minutes. Remove from oven and cool slightly. Make sure you get one before they’re all gone!

Yummmm! Blueberry and chocolate? It sounds like they would go so well together but you don’t see this combo often. We will def be trying this!

I thought of it when I passed the chocolate covered fruit in the grocery store! I already had chocolate chips and blueberries at home so gave it a whirl – they were fantastic! 🙂
