Garden Tomato Salad with Avocado, Basil and a Balsamic Reduction Honestly, what could be better than garden ripe tomatoes. I wait all year to make this salad! I single out the most beautiful tomatoes. I must confess, right now my husband and I eat a tomato sandwich every day for lunch. I won’t even touch a tomato the rest of the year, from late July till late September it is tomatoes, (and corn) for me. This is a simple salad, but a real winner…

Garden Tomato Salad with Avocado, Basil and a Balsamic Reduction
4 large ripe tomatoes
2 ripe avocados
1/4 cup fresh basil
1/8 cup reduced balsamic vinegar
kosher salt and pepper mill

Slice the tomatoes into desired size. Cut avocado’s in half and remove pit. Slice avocado to desired size. Julienne the basil and sprinkle on top. Take a bottle of good balsamic vinegar and in a small sauce pan reduce by half. Drizzle on top of the salad and top with kosher salt and coarse ground pepper. EXCELLENT!
