Crispy Fried Zucchini with Tzatziki Sauce
One of my favorite summer vegetables is zucchini. Don’t be surprised if you see several zucchini dishes from me over the next few weeks. I have 5 zucchini plants producing right now and boy are they producing. This is one of my favorite dishes with zucchini. I served it as an appetizer on this occasion because it is so good. The tzatziki sauce with the fried zucchini creates an excellent flavor profile and is great for a meatless meal too…

Crispy Fried Zucchini
1 large zucchini
2 egg beaten
1/4 cup half and half
1/2 cup flour
1/2 cup bread crumbs
1/2 cup olive oil
2 tsp granulated garlic
1 tsp salt
1 tsp pepper

Slice the zucchini into pieces about a centimeter thick and set aside. Set out three separate shallow dishes or bowls. In the first bowl, beat the egg and half & half together with 1/3 of the salt & pepper. In the second bowl, place flour with 1/3 of the salt & pepper. In the third bowl, place the bread crumbs and the last of the salt & pepper. Dredge each zucchini piece first in the flour, then the egg mixture and last the bread crumbs making sure to coat both sides completely.

Heat oil in skillet on stove until just hot. Fry zucchini on both sides until crisp.

Serve with tzatziki sauce…

Tzatziki Sauce
1 seedless cucumber, grated
2 cloves garlic, minced
1 lb plain yogurt
1 tsp salt
1/2 cup sour cream
2 Tbs red wine vinegar
juice from 1/2 lemon
2 tbs olive oil
1/4 cup fresh dill, chopped
1/2 tsp pepper

Place yogurt in a fine mesh strainer over a bowl and cover with plastic wrap. Place yogurt in the refrigerator for 2 to 3 hours. This allows the yogurt to become thick and creamy. Remove from refrigerator and discard the liquid in the bowl. Add the thickened yogurt to the bowl along with the rest of the ingredients. Mix well and serve. This sauce can also be used as a dip.

  1. I like finding a variety of using my son’s bounty of zucchinis. I also had not found a recipe for tzatziki sauce. We go across the street in our small town and buy this from the Greek restaurant called, “Opa’s.” This will save some money. 🙂

    It looks delicious! If it wasn’t fried I’d be all over this. I gave up most fried foods in my early twenties. I splurge with French Fries once or twice a year. Maybe there’s a baked version? If so you two are the ones to find it and make it delicious! I hope you do cause I love zucchini!

    1. Yes you can bake these. I recommend you dredge them in Dijon mustard then bread crumbs. Use a little olive oil on the baking sheet and turn them at least once. You will accomplish the same goal. I have a recipe for un-fried french fries that you just reminded me of… off to the kitchen!

        You reminded me of an un-fried french fry recipe I have for sweet potatoes I’ll have to see if I can find. Looking forward to seeing your un-fried fries on the blog!

  3. I just made zucchini bread yesterday too! My plants are producing so much I feel like we are having zucchini everything. Wait till you see what I’m making with it next Monday…
