Linguine with Basil & Garlic Aioli

Here’s a simple ‘go to’ for a quick and delicious pasta with little fuss. Pasta Aioli… So simple yet so good! I would eat this a lot in college because it was something that didn’t require a lot of time or money. I will admit in college I used dried spices instead of fresh and my cheese was probably not real cheese but a cheese substitute….LOL! It was good then, but better now that I only have the best ingredients on hand.   

Linguine with Basil & Garlic Aioli
1 package linguine noodles
3/4 cup good olive oil
8-10 cloves of garlic chopped
1/4 cup fresh basil chopped
1/4 cup fresh parsley chopped
salt & pepper
2 Tbs butter
1/4 cup pasta water
1/2 cup Parmesan cheese

Boil Linguine according to box directions in a large pot. Here’s a tip I discovered by accident…use a wine bottle cork to prevent water from boiling over. Strain pasta; reserve 1/4 cup pasta water. Return pot to stove and heat olive oil on medium-high. Add garlic first and cook for one minute. Add herbs and cook for an additional minute. Return pasta to pot. Add butter, 1/4 cup pasta water and Parmesan cheese. Toss generously.

Serve and Eat!

  1. That looks so delicious. Basil, garlic and Parmesan. What an powerful combo. My Italian friends say it only tastes good with good pasta. I was able to find some ‘good’ pasta. And they were right! I have picked some basil and will make your delightful recipe this afternoon

  2. I hope it was good… I love pasta, and I love simple. Today I made copious amounts of pesto. Another easy go to… once you make it… Lol!
