Zucchini Gratin

I love to think of creative ways to get my household to eat vegetables. Zucchini is one of my favorites and with the addition of shredded cheese and breadcrumbs it takes the flavor to a whole new level. Enjoy!  

Zucchini Gratin
3 large zucchini
2 tablespoons extra virgin olive oil
salt & fresh ground pepper
nutmeg (a dash or two)
1 cup shredded cheese (I used Monterey Jack)
1/2 cup breadcrumbs
1-2 tablespoons butter, melted

Heat oven to 400 °F. Wash and dry the zucchini to remove any dirt. Slice into 1/4 inch rounds. Heat olive oil in large skillet on medium-high heat. Sauté zucchini for five minutes; sprinkling with salt and pepper to taste. Spread half of zucchini on the bottom of an oven-safe dish. Sprinkle with nutmeg and half of shredded cheese. Top with remaining zucchini, another sprinkle of nutmeg and remaining shredded cheese. Sprinkle on breadcrumbs. Drizzle with melted butter. Bake in heated oven 10-15 minutes until top is nicely browned and zucchini are tender.

    1. Exactly! My sister Heidi (the other half of Fabulous Fare Sisters) has a huge amount of zucchini in her garden! And you’re right…cheese makes everything taste better! 🙂
