Excellent Herb Boiled Potatoes
As you get to know Linda and I you will notice that we love all things Jane Austin. Linda would agree that our all time favorite Jane Austen book (and subsequent movie!) would have to be ‘Pride and Prejudice’. There is a scene in the movie where ‘Mr Collins’ is visiting the estate he will inherit, causing all five of the ‘Bennet’ girls to be left without anything, (as only boys could inherit). During their first dinner encounter, he asked the mother ‘Mrs. Bennet’, “To which of your daughters do I have to thank for these excellent boiled potatoes?”. I love that line… In any case, I do love boiled potatoes. They are light, and with the right blend of herbs and of course butter, they are a delicious side for a great steak dinner…

Excellent Herb Boiled Potatoes
4 white potatoes
1 Tbs salt added to water for boiling
1/4 cup fresh parsley chopped
1/4 cup fresh dill chopped
1/8 cup fresh chives chopped
3 Tbs butter
salt & pepper

Peel potatoes and place in a large pot with 1 Tbs of salt and cover generously with water. (It is important to have a large pot with a lot of water in order for the potatoes to be light and fluffy. The ratio of potato to water will distinguish between starchy potatoes and light and fluffy ones). Boil potatoes until fork tender. Drain potatoes; reserving 1/2 cup of potato water. Return potatoes to pot and add butter.

Next add chopped herbs, salt & pepper and a splash of potato water (as needed). Serve hot! These potatoes are also great with sour cream. If you serve them cold, simply add 2 Tbs red wine vinegar and 1/4 cup olive oil to them for an excellent potato salad.

  2. Hi Heidi, this recipe looks so good and loved the combination of herbs you added in. Potato is the best vegetable which can be easily cooked and I have tried many recipes but this here looks entirely different. Will try it…

  3. These look amazing! It’s one thing to have another great recipe, but the way you make everything look so appetizing, WOW. Another great job. We’ll be having these tonight.

    Michele has an herb garden (we watch too many cooking shows and Giada has one, so…) around our pool, instead of regular plants, we have parsley, sage, rosemary, thyme, basil – all surrounding the pool in various planters. They look nice and they’re useful, and since it’s a screened-in pool, no bugs get on them. There is nothing like fresh herbs when you make anything. Plus, the kids can help “pick” the leaves for the herbs.

    Everybody helps out and that makes it all taste better.

    1. Thank you Dan… It’s so true, I love using herbs in everything. I now have three herb gardens with so many varieties of basil, oregano and terragon, sometimes I get lost. Last year I grew Mini-bell tomatoes around the pool so everyone could just pick little tomatoes and eat for fun. This year the rain has been crazy. An enclosed pool must be wonderful!
