Crazy Good Blueberry Pancakes


This is one of those oops that turned out fantastic. One morning my youngest son Gabe wanted pancakes for breakfast and he wanted me to add the blueberries that he and his girlfriend had picked at a local farm. Only one problem…I didn’t have any milk left in the fridge. No cream, no half and half…all I had was Bailey’s French Vanilla Coffee Creamer that I use for my morning tea. I thought, well let’s just give that a try and see how it goes…and this is how it went! Keep in mind I was preparing these for one big guy so I used a small amount of ingredients. It made 8 medium sized pancakes…Crazy good!   

Crazy Good Blueberry Pancakes
1/2 cup flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon sugar
1/2 cup Bailey’s French Vanilla Coffee Creamer
1 tablespoon water
1/2 cup fresh blueberries
margarine for cooking

In a bowl, combine the flour, baking powder, salt, sugar, creamer & water. Heat a skillet with margarine and spoon batter into pan. Dot with blueberries.

Turn over with a spatula when nicely browned on the bottom. Cook until pancakes are again nicely browned.

Pour on your favorite syrup…

  2. Sounds delicious Linda. That happened to me one time and I ended up substituting vanilla yogurt. It turned out really good, but coffee creamer sounds even better.

      1. I’m thinking I might try a mix of almond meal and coconut flour. That works for another recipe I have for pancakes that falls a little flat, but if I can use the soy french vanilla cream it might give it just the right help. I’ll let you know!
