Fourth of July Dessert – Strawberry Blueberry Shortcake

Happy 4th of July! Many of us are having barbeques and family get-togethers to celebrate our Independence Day. Since our country’s colors are red, white and blue, here’s a simple red, white and blue dessert to share with your family on this celebratory day. God Bless the United States of America!  

Strawberry-Blueberry Shortcake
4 slices pound cake
15 fresh strawberries, rinsed
1 cup fresh blueberries, rinsed
whipped cream
2-4 tablespoons sugar

Slice the strawberries. Toss both strawberries and blueberries with 1-2 tablespoons sugar and set aside to macerate; the sugar draws moisture from the fruit and creates a syrup (more in the strawberries than in the blueberries). Place the slices of pound cake on plates. Top with the whipped cream, strawberries, blueberries and syrup.

The beautiful red and blue of the berries pops right off the plate! Topped with the fluffy white whipped cream it’s a delightful dessert. Served with vanilla ice cream on the side makes it even more delicious!
