Cilantro Lime Rice

As you know I love to make all different kinds of rice to keep the hubby happy! He prefers rice over potatoes so I’ve been kept on my toes trying to think of creative ways to use rice. This Cilantro Lime Rice is a real favorite! I served it just the other day with Sunday’s Slow-Roasted Pork Roast. I use vidalia onions because they’re a great summertime onion but you can use just about any onion you’d like…

Cilantro Lime Rice
1 tablespoon extra virgin olive oil
1/2 vidalia onion, diced
1 garlic clove, minced
1 1/4 cups rice
1 lime, zest and juice
1/4 cup chopped fresh cilantro
1/2 teaspoon salt
2 1/2 cups vegetable stock

In a medium saucepan, heat the oil on medium-high. Add the diced onion and sauté five minutes. Stir in the garlic and sauté another minute. Add the rice, lime zest, fresh cilantro and salt.

Sauté a few minutes. Add the vegetable stock. Bring to a boil; reduce heat and cover. Allow to simmer until rice has absorbed all the chicken broth (about 15-20 minutes)

Scoop rice onto serving dish and squeeze with lime juice.

  1. Oh my goodness, this is what I am making when I’m done surfing WordPress today! I’m making a ton of burritos to cater to a fireworks store and cilantro rice is one of the ingredients I’m using. I don’t usually use chicken broth when I make the rice but I think I will this time! This looks so good!

  2. Lovely, lime and cilantro are two gorgeous flavors. You could make a whole lot of rice dishes for your hubby. Rice pilaf, black beans and rice, paella, and the list goes on. I too enjoy my rice, but I do happen to like potatoes too, although I only indulge once or twice a week 🙂

  3. You’re welcome!! I have a hubby who loves rice more than any other side but white rice is so boring!! I’m continually thinking “what flavor rice would go with this type of meal” and am usually inspired by the seasoning of my entree 🙂

  4. I was thinking today, while making GF/CF pancakes about how the tools I use most have changed since we changed our diet. Anymore, my ceramic lined skillet, my tortilla warmer and my rice cooker are the three most used items. I cook a lot of rice, and I love it when you share great ways to jazz it up! Thank you!
