Lemon Buttered Broccoli Bites
1 head of broccoli, cut into bite-size pieces
1 lemon, zest & juice
1 tablespoon butter
1 teaspoon salt
Place broccoli bites in a medium sauce pan. Add an inch of water. Bring to a boil over medium-high heat, sprinkle with salt. Cover and simmer 5 minutes.
While broccoli is cooking, squeeze the lemon juice into a small bowl. Add the zest and the butter. Drain the broccoli and place back into the pan. Pour the lemon-butter over the broccoli. Mix gently.
