Time for Taco Night! Instead of buying prepackaged tacos how about trying your hand at a fresh new way? These tacos are made with ground pork and seasoned just right. Spread with a Chipotle Ranch sauce, salsa and then layered with a delightful sauteed corn, onion & cilantro combo, fresh shredded cheese, and a squeeze of lime! Wow! The burst of flavor in the first bite! These will become a family favorite!
Pork Soft Tacos
2 tablespoons extra virgin olive oil
2 lbs ground pork
1 tablespoon paprika
1 tablespoon cumin
1 1/2 teaspoon salt
fresh ground pepper
1 large Spanish onion, chopped
10 oz box frozen corn
1/2 cup fresh chopped cilantro
2 limes, cut in wedges
12 tortillas (not the big ones!)
Marie’s Chipotle Ranch Sauce
Pico de Gallo Salsa
1 1/2 cups shredded cheddar cheese
Heat oven to 300°F. When oven is hot, wrap tortilla in aluminum foil and place in oven until everything is ready. Heat one tablespoon oil in a large skillet on high heat. Brown ground pork in hot oil 5-7 minutes, chopping pork as small as possible. Stir in paprika, cumin, salt & pepper. Lower heat to low, put lid on and allow to simmer a few minutes to make sure pork is fully cooked.
Meanwhile, heat remaining oil in a medium skillet on high heat. Add chopped onion, lower heat to medium-low and saute onion for five minutes, stirring frequently. Add in corn and saute three minutes.Add chopped cilantro and squeeze in 2-4 lime wedges. Lower heat to low and put lid on until ready to assemble. Remove tortillas and assemble tacos. Spread Chipotle ranch sauce on each tortilla, follow with a layer of salsa, pork, corn mixture, shredded cheddar cheese & spritz of lime.
